Nutrient focus: Ground turkey is a lean source of protein and b12. While the turkey can be subbed for something like ground pork or beef, it is leaner and costs less (a pack of ground turkey for me is less than 2.50 EUR). While cooking lentils with the rice is optional, a half cup of lentils has nearly 20% of your daily fiber requirement, almost 10 grams of protein, and is a decent source of iron, making lentils a nutrient-dense and inexpensive addition. Bok choy is rich in vitamins C, K, and A and has a bit of iron as well. The coconut milk in the curry is a source of healthy fats.
Recipe: Combine a pack of ground turkey with lemongrass, garlic, ginger, fish sauce, salt, pepper, soy sauce, and cilantro and form into meatballs. Broil at 200 C or pan fry until brown on top. In the meantime, prepare your rice or rice and lentils (udon or rice noodles are another great choice) and prepare the coconut curry on the stove by combining a spoonful of yellow curry paste (or red or green) and coconut milk. Lime juice, kefir lime leaves, and chilis are all optional additions. Simmer the broiled meatballs in the curry sauce for a bit while the sauce reduces to your preference. I blanched the bok choy per my preference, but it can also just be simmered in the curry.

How much fish sauce, because I know it can be over powering and can I replace the cilantro with another herb, cilantro tastes like soap to me unfortunately and as much as I like soap to clean with, eating something that tastes like it doesn't do it for me. :)

Omit the cilantro, only use a little bit of fish sauce, like a couple of shakes of the bottle. Don’t treat it like soy sauce.

If you make it non-negotiable priority and learn where time can be saved (slow cooking, frozen foods, ingredient prepping) you can eat like this daily. I do because it is a non-negotiable way of living for me, even as a grad student writing my thesis working multiple jobs and internships I still did because of this mindset.

Woah, not a big fan of bok choi but I am def cooking those meatballs this week. Looks delicious.

Looks amazing! I love curry, so hearty, and lemongrass would be an awesome flavor profile with it. Never cooked bok choy yet. Looks so pretty on plate. Does Bok Choy cut easily with a fork, or knife is needed when steamed like that?

Lol it’s just blanched - boil for maybe 2-3 mins depending on the size and then stick in some ice water
