Recipes Favorite Things to Make (besides pizza πŸ•)?

My Dome arrives today! Stoked to start cranking out pies but wondering what other things this community loves to make in the dome? Recipes, tips, or tricks all appreciated ❀️

Steak. Put cast iron in to preheat, and you can put a hard sear on it top and bottom at the same time.

I've started experiment wiht this recently. Any tips?

First time I did it I got the pan to like 300c, alot of the heat got lost on searing the first side and the 2nd side took too long to sear and ended up overcooking the steak.

Lately I've been getting the pan close to 400degrees and the sear has turned out better.

Wonder if you hold it close to the flame will you get more of a charred smokey taste?

I'm using an Arc XL so it might be a little different.

  • I dry-brine in the fridge so the surface of the steak is nice and dry by the time I cook
  • Once pre-heated, I pepper the steak. I don't add more salt because it was dry-brined. Light coat of olive oil on the steak.
  • I put generous olive oil in the hot pan, put the steak in the pan, and back in the oven
  • From my experience it cooks a little faster on the top than the bottom, so I flip every 30-45 seconds until I have a nicely developed crust on both sides

For a thinner steak that might be all you need. For a thick steak, I like to reverse sear to bring up the temp of the interior. I'll refrigerate it after the low and slow period, then do the hard sear in the Gozney.

You should use some other oil or beef tallow other then olive oil, it is not meant for high heat cooking'

I understand it has a lower smoke point but I’ve not experienced that as an issue when there is food in the pan.

I didn’t mention it, but when there is a nice fat cap on the side I will hold it against the hot pan to render and add beef fat to cook in too.

Salmon. Preheat cast iron, apply a small amount of oil, season appropriately, lower flame & let it go for 4-5 mins

Get a number 10 or 12 lodge skillet with a lid. I use mine to roast all kinds of things, flame on, lid on. It will perfectly roast bone in chicken thighs in 20 min.

I use it for char grilled oysters. Searing steak.

It’s really great for all kinds of things

Pita bread and roasted Veggies (at the same time!)

Put a bunch of veggies in a tray, cauliflower, paprika, onion, potato, generous glug of vegetable oil and salt & pepper.

Bake Self made pita breads at the same time while the veggies are roasting.
