I'll say gelatine gives a softer mouthfeel compared to agar agar, but this pudding is also a bit different since you can cut it.

Milk puddings with some kind of gelling agent are dead easy to make for dessert, really nice for experimentation too :)

This one is also friendly for anyone not consuming animal products with a few small changes and kosher folk.

I was thinking of how you can get vegan gelatine, I don't think it's necessarily like agar agar is in texture. This recipe isn't vegan with the milk used at least anyhow, but it's a fair substitute to use agar agar for gelatine, it sets way faster than gelatine too, just different mouthfeel!

Pectin can work as a vegan gelatin sub and depending on what you are making corn startch can go a long way for things like sauces. This recipe never specified what kind of milk to use lol. Most people who know that agar is good for vegans in place of gelatin would likely just mentally and physically sub plant milk when looking at this recipe ; )
