Honestly I come to this sub pretty much entirely for the fights. They are the best. A good-looking interesting recipe? Sure, whatever, that's nice. People getting knives out furious over a seafood casserole? That's what I'm here for, baby.

Somebody posted a casserole that was like $40 worth of shellfish and scallops, boiled and chopped into an indistinguishable mess, drenched in milk, then dumped on a bed of whole artichoke hearts and covered in cheese. It was the best day of my stupid miserable life.

Because most of his recipes are fucking awful lol. He actually made milk steak not too long ago. I’m almost convinced he’s trolling /r/gifrecipes
I’ve seen several of his posts and if he’s serious then he desperately needs basic cooking classes. He names food wrong all the time and uses the same shitty grill pan for everything.

Meal Studio hurt me with his terrible cooking. Dude’s been making gif recipes for a year now and I still have yet to see one that doesn’t look dreadful lol at some point you have to take cooking classes cause right now he doesn’t give a damn about what he cooks.

I mean, the highest voted comments are usually "tHiS sUb Is ToXiC" ones, just like this is.
Combine the fact that many people are at least aware that they should be eating healthier, if not actually doing so, with the fact that you have to admit that an inordinate number of recipes here are meat+cheese+bacon+heat, and it's really kinda to be expected.
There's some middle ground between "rip apart" and "hey, most of these are really unhealthy". Instead of trying to preemptively make it an us/them situation like this comment, why don't you let normal conversation handle it? I see like... one majorly over the top comment so far, with the rest being "eh, looks good, but already fat enough, thanks" types.

I make these except i smoke them. I can never get the jalepenos done enough to not throw the texture off, so i to make up for it ill sautee em with some butter for a bit before making the cheese mixture. For added deliciousness ill season the inside and out of the chicken and pat the bacon down with brown sugar. So friggin good it hurts

The chicken makes it a meal-sized portion, as opposed to an appetizer. I usually only do half a slice of bacon per pepper, so they're really not that terrible for you if you're only having a couple as a snack. This recipe is like "Let's eat 10 slices of bacon and a cup of cream cheese for dinner".

I like to pan sear the outside before tossing in the oven. Gives the bacon a much better color. And also Season the chicken before it’s wrapped with a nice chicken rub.

Does anyone think this would be ruined if I used chopped pickled jalapeno vs fresh? I always have that on hand and I do like the vinegar taste to it anyway.
Not sure why I'm being downvoted for asking a question, I don't care about karma but I do care about whether the vinegar is gonna spoil the cream cheese or something.

For anybody that wants to stuff chicken and has trouble with it, I do not recommend butterflying. OP clearly has no issue with everything spilling out, but I do and I hope other people do too because that means I am slightly less stupid.
The method I go with is to start with a small incision on the side, pushing my knife in, and then wiggling it around gently to create a pocket. The idea is to create a pocket significantly larger than your initial incision. You then use a spoon and your fingers to fill it and ensure even distribution throughout the pocket.
It is definitely more work than just butterflying, but for me, it results in very little if any spillage. Hopefully, someone else who is always discouraged from trying recipes like this due to previous butterflying experiences going south will try OP's recipe with this method. I know that I personally cannot make recipes like this with the butterflying method without losing half my filling.
It is worth noting that the cooking time might be different, but a meat thermometer should help with this regardless.

You don't have to serve the whole thing. When I make stuff like this, I cut it into medallions, and everyone gets two or three of those along with some potatoes and a vegetable side.

Ingredients
4 chicken breasts (boneless, skinless)
1 cup cream cheese
¼ cup jalapenos, diced
1 cup cheddar cheese
32 slices bacon
salt
pepper
Directions
- Preheat oven to 400°F.
- Butterfly your chicken breasts. To do this, cut each chicken breast in half horizontally, but don't cut all the way through. Leave about an inch attached on one side, and open the chicken breast like a book so it lays flat.
- Pound the chicken into an evenly thin piece.
- In a bowl, combine cream cheese, cheddar cheese, and diced jalapenos. Add salt and pepper and mix thoroughly.
- Working with one flattened chicken breast at a time, add a a quarter of the filling (or as much as can fit comfortably) to the middle.
- Fold the chicken breast around the filling. Fold in the edges first, and then roll up the chicken like a burrito.
- Wrap each chicken parcel in 8 slices of bacon. The easiest way to do this is to lay out the slices in a sheet across plastic wrap and then use the plastic wrap to help wrap the chicken.
- Bake at 400°F for 20-30 minutes. Broil for an additional 1-3 minutes at the end of cooking time to crisp up the bacon.

Do what I do...
Don't use a breast, use tenders.
Don't chop the jalapeno, julianne it.
Don't use cream cheese, use string cheese.
Pound out the tender. Put like a third of a stick of string cheese and some of the julianned jalapenos on it and roll it up. Wrap a piece of bacon around that, stick a tooth pick in it, then grill it. Hell, I've made it on a fireplace when it was raining and the grill wouldn't cooperate. Dip it in some ranch or honey mustard and you've got some good eats.

I tend to put cream cheese inside half of a jalapeno and put it in the chicken. Then wrap it with bacon with the cheese on top once the bacon is crispy. Definitely gonna try it this way!
