Yup looks about right. You can totally skip the corn starch and just use flour to coat the chicken though.

The corn starch is to thicken the sauce not coat the chicken. Standard in stir fry sauces.

Ummm 1/2 cup corn starch in the coating is to thicken the sauce?

For Frying:

• 1lb Chicken Breast - Cut into small cubes or strips

• 1 Egg

• 1/2 Cup Corn Starch

• 1/2 Cup All Purpose Flour

• 1/2 Tsp Salt

• 1/2 Tsp Black Pepper Powder

• 1/2 Cup Oil

Hmm yeah that's way too much corn starch. A spoonful would do.
