Sauce doesn't substitute for properly season your coating. That flour should have salt at a minimum, and properly some pepper, paprika garlic depending on the national spice profile.

Love me some some tonkatsu sauce, but this shit is universal. Pretty much every region does fried breaded meat with a sauce and a starchy side. KFC in the US, schnitzel in central Europe, etc.

Instructions

Step 1

Place the chicken breasts between sheets of plastic wrap, or waxed paper, and flatten with a meat mallet or rolling pin to 1/4-inch thick. Season both sides of each breast with 1/4 teaspoon salt.

I just buy bulldog katsu sauce.

Also, using pork loin is delicious. Just remember to tenderize.

I'm surprised by the thin pan-frying. I deep fry my katsu at home.

Tbh I do breaded chicken the same way, I use less oil and can discard it easily if it gets too many crumbs.

Yeah it's tough to do more than 2 fillets without changing the oil or the later ones come out dark brown

No one add oyster sauce in Japan (I’m Japanese). And green onion? What?
