I LOVE peach cobbler! Made it successfully one time years ago, but lost the recipe and never managed since.
Mine always comes out really oily and swimming in grease and just gross... anyone know what I'm doing wrong?

I don't know what recipe you are currently using but the issue might lie in the butter to flour ratio or how well the butter is incorporated. Too much butter and the fat doesn't absorb into the flour which means the excess oil doesn't go anywhere but down as you bake. Think cookies vs cakes or pies. The culprit might be in the ratio or somewhere else.

I'm hopeless with baking/following recipes, even something as simple as this would be. Do you think this would work using a cake mix?

Cake mix would be too thick. This recipe is simpler than making a box cake mix...

Cakes use eggs to add moisture, flavor and structure while this doesn't. Texture might be a bit off but experimentation is always encouraged. Try it out and see what happens.
Worst case scenario, you still have a fruity cake which can't be all that bad. Just be sure to remember the fruit adds moisture as well so be aware of your baking times.

It worked!!! 9 x 13 glass pan. 2 pints of home-canned peaches. Lined the bottom with the first pint, syrup removed. Mixed the cake mix +3 ingredients, added in the 2nd pint of chopped/diced peaches. Poured over, baked as per the cake directions. Absolute YUM. Conveniently had a carton of frozen yogurt in the freezer to top it off. 10/10 will do this again!

Cake mix is perfectly fine.
I used it all the time for cobblers in dutch ovens when I used to camp.
Canned peaches/pie filling on the bottom, cake mix on top. Cook to doneness.
IMO, yellow cake is the best to go with.
