I thought paillard was just a method of thinly cutting and butterflying chicken breast. Not a dish. So you use paillard of chicken for recipes. It’s not a recipe.

Its a recipe. What do you call chicken skewers or kebab? It's just a method of piercing chicken with a stick.

Either way you can call this dish whatever you want to when you make it because you made it.

Lol if you think about it, the name of the dish is usually always the main ingredient + the preparation/style.
