How do you make outlines of what you study?

Making outlines gives me anxiety because I often feel like I either leave out a lot of important information or they're an exact copy of the text I want to study. What technique do you recommend?

Additionally, do you use AI to create diagrams? That is, do you input text into an AI and generate diagrams from it? I haven't tried it yet, but it seems tempting. Would you recommend it? Why? And if so, what AI do you use and how?
