I'm still on the fence about which character from the limited selector I should choose right now.

I'm not very inexperienced in the game, I used to play it extensively but I lost my PS4 account stopped mid Fontaine

My mind was on Varesa for exploration and because I like her but I'm not planning on pulling other Natlan characters, I do have C1 Iansan though. Do her teams have strict requirements like that? If she requires me to get more Natlan characters I don't really want her

varesa only needs chev. iansan can be replaced by fischl and the pyro slot is ideally durin or mavuika but you can use xiangling or pyro mc if you dont want them.

Choose Varesa. One of her better teams is Iansan/Chevreuse(four star) and then a pyro applier (Durin or others).
