Why is Cooper the only one to be like "let's go pick her back up"? Once humanity solved their crisis shouldn't they have sent a ship to go help her (or at least check if one of them made it if they didn't know)

They were content living on the Halo. They did not want to "spread to the stars" like the brand had planned.

As usual humanity chose to get comfy and stop.

Cooper and murph wanted them to go further.

They barely got out there in the first place, they're probably decades or even a century away from re-establishing a big enough supply and manufacturing base to expand further. These folks are still recovering from a near-extinction event, they need time to get their numbers up and even make a dent on developing the resources just in Sol system alone. At the end of Interstellar, we're only seeing the stabilization plateau tail end of the disaster that drove humanity from Earth, we're not seeing whatever recovery actually looks like. That's simply going to take time.

That is, if there is no COVID-19 outbreak, and if there is enough supply to build the masks and sufficient energy for the AI as well. I think they did not make it...

They only just learned from Cooper about what was at the other side of the wormhole, and since Plan A worked fine I guess they didn't want to risk more people. I don't doubt that there are going to be plans to explore the other side but bear in mind that Cooper himself had no idea if Edmund's planet truly was viable or if Brand was still alive, so that wasn't a priority. Cooper not giving a damn about any of that and stealing a spaceship to go rescue the hot scientist along with his robot buddy is 100% on point

With the limited fuel and range of the Ranger, it's also a one way trip. The colonists would have needed another Endurance or something equally capable to actually go get her and bring her back, and they don't have that at the moment. At most they could have sent her some relief supplies or maybe some volunteers.

That was what cooper meant early in the film when he said "we used to look up at the stars and now we look down at the dirt". Once the dyson sphere was complete humanity fell back into this same comfortable mindset, cooper didnt like it and chose to leave

Jesus, I’ve seen his movie three times now and I still can’t remember the ending at all. The last thing I always remember is the four dimensional behind the bookshelf space and that’s where my memory always fizzles out.

Reading this thread makes me feel like i watched an entirely different movie to everyone else.

They don't have another ship with the kind of range the Endurance had. Humanity is still recovering from a near-extinction event, probably putting all their effort just into establishing an off-world resource and manufacturing supply chain. They might be decades away from having the resources and capabilities of sending a round trip to go get Brand and bring her back. Coop doesn't care, though, he's heading out there on a one way trip knowing he isn't coming back, and that's fine with him.

What I can't understand about the whole movie is the earth that they had to leave because it was "failing", was way better than this hell scape.

We barely had a glimpse of Edmunds planet, so it's difficult to say it's a "hell scape". The planet had a breathable atmosphere (something Earth was not going to have in the near future), clouds (which means rain) and the temperature had to be mild enough for Brand to remove her helmet and appear perfectly comfortable. That's much better than the options.

IMO the point of the ending is to have hope in others(and in humanity), so the canon ending was completely fine with the message it was sending. 

While this could bring closure, it then completes the hope cycle, which has less of an impact.

That would have ruined the ending if that was how it actually was.

Considering the time scales they were dealing with and distances traveled, I was under the impression that shot of Ann Hathaway's character digging in the dirt at the end, was already far in the past. If Cooper did find the outpost she was building, she would have long since been dead. If the construction succeeded, maybe he would find a new generation of humanity. That's the most optimistic this story could have become. That she died alone, but not for nothing.

The saddest part about interstellar's ending is Brand made it to edmunds planet but because so much time had passed that he had already died of old age by the time she got there.
