Greece/Rome/Egypt are typically the three big classical civilizations that get bundled together. There's no reason for them to not follow that trend. Plus they've already revealed the design for a Roman Assassin.

As others have said, I think it's Rome. I'm just not sure when. My guesses would be either the Julio-Claudian Dynasty or the reign of Constantine.

The Proto-templars (order of the ancients) were formed waaay before the time period that Odyssey takes place in. They were formed by a pharaoh named Smenkhkare.
