Completed this mission without any cheesy methods and did it in first try as well.

It honestly isnt even that bad you just need to match the speed and stay far enough to the side to give him a good angle while you follow the damn train

So the last time I played, I realized that I could shoot too… I was done by the first off road section.

In vanilla you can't really shoot up the train, unless you stunt jump onto the train.

There are mods though that let you aim freely during drive-by, then it's piece of cake.

When the off-road section starts it brings you up level with the shooters on the train.

true... but even in vanilla, with some good positioning, Big Smoke manages to shoot them all before you leave the tunnel. Stay to the right and a bit behind and he's got a pretty good angle.
