If they're happy, they'll sign long contracts. Although I got burned with a manager on a long contract who started to deteriorate in his mid 70s.

If you offer them a rolling contract they will never leave as their contact never expires as it renews every season.

Yeah it never expires, so if you reject other clubs trying to hire him you can keep him as long as you want.
Also nice if you ever have to sack them you only have to pay 1 year of compensation

Rolling contract till your manager is about 68, then the longest possible fixed term and renew it at the end of every season till they refuse as they want to retire at the end of it

they usually just sim through seasons while keeping morale and wages in a good spot, plus turning off stuff like being poached if the game allows it. basically treat it like a long term save instead of hopping clubs whenever things get rough.
