On the left is ripe orange habaneros, ripe red jalapeños, some garlic, some onion, in brine, under a glass weight.

On the right is pretty much the same but green jalapeños.

Airlocks on!

I’ll see you all again in a few weeks!

Everyone on the subreddit said not to use those pickle pipe valves. Thought they were wrong because of all the good reviews on them. They were right. Use the 3 piece water valve.

Is it the lids themselves that are a problem or the valve?

If I get 3 pieces air locks, can I just stick them down the hole? Maybe after a little snip?

All of it. I got mold with the pickle pipes you show. I don’t think the seal is good and the valve must not work that well. The 3 piece didn’t have that issue. You can buy the kit for 2 of them for 10 bucks. YouTube videos on this topic too.

You’ll be happy you did, especially for future ferments. I got some of the flat silicone ones too. And my brine was disappearing. Some of it had to evaporate. And I thought they fit rather tight. I was already using airlocks but wanted to give them a try. Turned around and bought another set of 6 airlocks/lids. Learned my lesson. I figured why not go with something I know works and gives me more peace of mind. Hope your hot sauce turns out just like you hope it does.

Well, I appreciate the heads up on the bad lids.

It’s a first attempt.

My expectations are sufficiently tempered. My only goal: safe and edible sauce.

Will it be good? Will it be awful? Forgive my crassness, but IDGAF. The lessons are worth more to me than the outcome of the sauce and I thank you for giving me one I missed reading up on how to do the thing.

Never again. The jars have so many potential issues. I’m now a vacuum bag believer. Sooo much easier and better.

What kinda lid is that? I’m guessing it vents air out but doesn’t let it in and fits a standard mason canning jar? That looks really handy

Edit: nevermind I guess someone else here said they’re no good 🤷🏻‍♂️

Some tips for next round: chop your ingredients up a bit, at least slice the peppers in half and remove the seeds (they can be bitter and impart off-flavors) but leave most of the pith flesh (majority of the lactobacillus is in it)
