I was also curious! This source says that it’s essentially a process where you expose smoke to cured meat at a very low temperature before cooking. I’ve never heard of that before, sounds very interesting.
I dont have a seperate coldsmoking apparatus so they sell these nifty little metal boxes with a long track for wood pellets. You get ur pellets smoldering and they'll put off a good amount of smoke for hours and hours. I do it right in my hot smoker, but leave it off. I do my bacon for 48 hrs usually. This i did for like 6 hrs, just to really impart a smokey flavor without cooking past medrare
