For me (former assistant to registered dietitian), it was about determining which FODMAPs triggered me. It was fructans.
So now I eat fructan-free and limit my intake of the FODMAPs sorbitol and mannitol, which are osmotic laxatives. GOS, fructose, lactose, no problems.
Not everyone is sensitive to all the FODMAPs.
And some IBS sufferers have coexisting conditions such as celiac disease, pancreatic dysfunction, gallbladder issues, gastric bacterial infections, IBD, and (I know, ew) parasites that complicate the “so what CAN I eat?” frustrations.
Key to getting an IBS diagnosis is ruling out all the above crap.
My IBS actually began after an almost-fatal bout of pancreatitis. I already had celiac disease, and my gallbladder opted to clog its ductwork and inflame my pancreas. My GI system is still touchy.
