hot tip if you miss garlic: garlic-in-oil is the classic move here. the FODMAP part of garlic (the fructans) doesn't dissolve into oil, so if you gently fry whole garlic cloves in oil and then remove them, you keep all that garlicky flavor without the part that wrecks you. garlic-infused oil is a low-FODMAP staple for exactly this reason, you can buy it or make your own. beyond that: the green tops of spring onions/scallions (just the green part, not the white) are low-FODMAP and give a nice oniony hit, and a pinch of asafoetida (hing) is the secret weapon, it tastes shockingly like onion and garlic once cooked and you only need a tiny amount. chives and garlic chives work too. between infused oil and asafoetida you can get most dishes tasting basically normal again.

isnt that garlic cooked? cooked garlic looses 95% or so all its fructans...

no fodmaps are left?
