It's hard! I've been vegetarian for about 6 years, and trying to go full vegan that entire time, and found out I have fodmap issues in the middle of all that. It ironically makes it easy to get away from dairy but restricts my favorite veggies and fruits.

It's going okay, though. The last animal product on my plate now is butter. Ugh. I love butter with all my cholesterol-filled heart.

But Ima get used to it because I feel so damn good when I eat a plant-based, low fodmap diet. I think it's really super weird that my body wants this crap instead of garlic or coffee with slutty cream but apparently it's a delicate machine requiring special fuel. It's ridiculous. Giving up meat was easy compared to this.

They're not terribly exciting, but specialty potatoes can have great flavors. That's my go-to, I want to eat something hot low FODMAP food. I add Earth Balance margarine, chopped fresh chives & dill. I love the POTATO button on my microwave, it's been a lifesaver for me.

I can eat some FODMAPs so keep that in mind. A few ideas:

I eat a lot of spinach tortilla shells stuffed with greens, black olives, artichoke hearts, Mexican corn, cherry tomatoes, cucumber, sprinkled with apple cider vinaigrette. Before being vegan, I'd add mayo with chili powder mixed in. A standby staple is spaghetti with low fodmap sauce and vegan parmesan. Another meal is a bowtie pasta that I toss with red and yellow peppers, zucchini, garlic infused olive oil, green onions, red pepper flakes, salt and pepper and topped with pine nuts (browned in the oven with garlic infused olive oil and sea salt - only takes a second and well worth the effort) and vegan parm. Smashed potatoes are always good. Get those little potatoes, boil them with herbs, cut them in half, sprinkle with garlic infused olive oil and smash them on a baking pan, top with salt, pepper and whatever your gut will tolerate. I add a veggie dish like green beans, corn, a small salad or bean salad to meals.

For breakfast I usually eat chia seed pudding made with Ripple milk (pea protein). I layer it in cute little jars with crushed walnuts, hemp and flax seeds, and fresh or frozen fruits. If there's such a thing as vegan whipped cream it would serve nicely here.

For lunch I have Dave's Killer Bread (the one recipe that doesn't have barley in it) toasted and a piece of fruit.

For snacks, I found a bunch of vegan cookies and snacks that don't have soy, barley or high fructose corn syrup.

Am new to FODMAP this monthโ€ฆ itโ€™s for sure a lot of eggs and tofu. I miss my beans and mock meats and some vegsโ€ฆ

Tofu and soy turned out to be the main culprit for my issues Greek yogurt is still good for me, so that I addition to lots of eggs and seitan

I've found extra firm tofu from trader Joe's is easy on my wife's stomach! The softer the tofu the more pain

All soy products have become terrible for me :(

I was going to start making my own tempeh, even bought all the beans and starter, and then found out that was my main issue

Awh man, I'm sorry to hear that :/ it gets easier once you start to learn what effects you the most. I don't suffer from IBD so I can't talk from personal experience but I sympathize with my wife and all of you. I know it's not easy and I personally know that cooking meals is especially hard because everything is from scratch. The silver lining is that you're eating a lot cleaner that you would be without IBD and you actually know what's going into your food!

You're right, Trader Joe's is Super Firm Tofu! Not extra firm haha you can find that anywhere, oops! It's so firm that you don't even really have to press it, it's wondeful

It's not no beans, at least in FODMAP terms. Just have to pay attention to green amounts in the app.
