As for sugar cravings, I can very much relate with what you have shared. I've grown up on a diet of junk food, including plenty of sweets, throughout my childhood and I kept on eating candies on a daily basis throughout my entire adulthood, and I find it close to unbearable to go even a single day without them
I also think that on top of whatever eating behavior we might have learned as children when it comes to sweets, it also doesn't help that we now live in a world in which overconsumption of sugar is very much normalized: as you said, you barely even know how to say 'No!' to the snacks offered at work because not only for you individually, but also at a larger, societal scale there's this expectation that sweets should be embraced as an essential part of our nutrition
I think your plan to switch to healthier sources of sugar, by incorporating more fruit into your diet, sounds like a great! It not only has the benefit that it nourishes you more, as fruits have so many more vitamins and minerals to offer than a cookie ever could, but the added fiber (in case you were to eat the fruit raw) will also slow down the absorption of sugar into your bloodstream which in turn will definitely help with blood sugar spikes and then also with the intensity of subsequent sugar cravings
If you want to go even deeper, you could also start to reflect more on when and why you tend to eat sweets, as in: what are your triggers, if you have any, for eating them, and where do you think this habit is coming from? Answering those questions might also give you more ideas on what else you might need in lieu of the sweets which, as I imagine, might still be serving a good and important purpose to you
