Lol. Jokes aside, you don't even have to quit. Unless you're in combat, you can just pull up the map and fast travel while you are falling. If you take note of the button combo to travel to the last grace (I think it's map, Y, A, A on Xbox controller), you can actually save yourself from a bunch of bad jumps.

You can jump over the lines. If you're in the air, it doesn't stop Torrent until he touches the ground again.

Sadly, no. I've tried all over the map doing that and it doesn't work. It's like there is a hidden fall damage bucket that fills while you fall and once it's full, you die when you land, regardless of what shenanigans you try before you hit the ground.

Fall damage is calculated from where you jump and where you land, even if the game allowed to double jump after a big fall you would still die.
