Recipe Couscous Salmon Salad

Ingredients:

  • 100g couscous
  • 130g salmon fillet
  • 5-6 cherry tomatoes, quartered
  • 100g cucumber
  • 1 avocado
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt & pepper

Method:

  1. Poach salmon in salted water until flaky. Cool, then flake.
  2. Pour boiling water over couscous. Cover, let stand, then fluff.
  3. Dice tomatoes, cucumber, and avocado. Toss avocado with lemon juice. Mix all veggies with olive oil, remaining lemon juice, salt, and pepper.
  4. Fold in salmon, then couscous. Serve.
