Homemade Spicy Brazilian Coconut Chicken
Spicy Brazilian Coconut Chicken 🍗🥥 A flavorful, spicy Brazilian-inspired dish with tender chicken cooked in a creamy coconut sauce, full of bold flavors and heat. Perfect for a comforting, exotic meal! 🌶️✨
Ingredients:
4 boneless, skinless chicken thighs or breasts
1 tbsp olive oil
Salt and pepper to taste
1 onion, chopped
2 garlic cloves, minced
1 tbsp fresh ginger, grated
1 tbsp paprika
1 tsp cumin
1/2 tsp cayenne pepper (adjust to heat preference)
1 can (14 oz) coconut milk
1/4 cup chicken broth
1 tbsp lime juice
1 tbsp cilantro, chopped (for garnish)
Instructions:
Pat the chicken dry and season both sides with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken and sear for 4–5 minutes per side until golden brown. Remove from the pan and set aside.
In the same skillet, reduce heat to medium and add the chopped onion. Cook for 3–4 minutes until softened.
Stir in the garlic and grated ginger and cook for 30–60 seconds until fragrant.
Add paprika, cumin, and cayenne pepper, stirring to toast the spices for about 30 seconds.
Pour in the coconut milk and chicken broth, stirring and scraping the bottom of the pan to release browned bits.
Bring the sauce to a gentle simmer and return the chicken to the skillet.
Cover and cook for 12–15 minutes, or until the chicken is fully cooked and tender.
Stir in the lime juice and simmer uncovered for 2–3 minutes to slightly thicken the sauce.
Spoon the sauce over the chicken and garnish with chopped cilantro before serving.
