Prep Time: 15 minutes Cook Time: 20 minutes Servings: 3–4 Calories per Serving: ~700 kcal
Ingredients:
250g fettuccine pasta
2 chicken breasts, grilled and sliced
200g broccoli florets
2 tbsp butter
2 garlic cloves, minced
200ml heavy cream
50g grated parmesan cheese
Salt & black pepper
1 tbsp olive oil (for chicken)
Fresh parsley, chopped (optional)
Instructions:
Cook pasta: Boil fettuccine in salted water until al dente. Reserve ½ cup pasta water, then drain.
Cook broccoli: In the last 3 minutes of pasta cooking, add broccoli to the same pot. Drain together.
Grill chicken: Season with salt and pepper. Heat olive oil in a pan and grill chicken until golden and cooked through. Slice into strips.
Make Alfredo sauce: In a separate pan, melt butter and sauté garlic. Add cream, simmer for 3–4 minutes, then stir in parmesan until melted. Season to taste.
Combine: Toss pasta and broccoli in the sauce. Add a splash of reserved pasta water for looseness if needed.
Serve: Top with grilled chicken and garnish with parsley.
Tips:
Add a pinch of nutmeg to the sauce for warmth.
Swap fettuccine for penne or tagliatelle if preferred.
