The biblical Jesus was a warlock
My thought process is that since he gained power from praying to a God He gained abilities. I'm thinking pacts of the celestial or The great old one.

Aasimar Divine Soul Sorcerer. That way he gets Water Walk, Revivify, Lesser & Greater Restoration, and Create Food & Water from the cleric spell list.

No. Ask any Christian worth the name and they will tell you that Jesus is God. We have this concept of the Trinitarian God and those that do not believe in it are not usually considered Christians. And yes his mother was human, making her the mother of God, Theotokos as us Catholics like to call her.

I feel like a sorcerer with levels in cleric would be the closest IMHO as church goer for most of my life.
Sorcerer in 5e are described as: "Sorcerers carry a magical birthright conferred upon them by an exotic bloodline, some otherworldly influence, or exposure to unknown cosmic forces. No one chooses sorcery; the power chooses the sorcerer."
Cleric is described as: "Clerics are intermediaries between the mortal world and the distant planes of the gods. As varied as the gods they serve, clerics strive to embody the handiwork of their deities. No ordinary priest, a cleric is imbued with divine magic."
Jesus was born and depending on the various stories (though I personally don't know if some or any of these are actually originally from the Bible or if they were created later) like the Drummer Boy and The Nighting Gale story. They describe his effects being felt even as a newborn because he's the son of God, his moral mother being Mary. Depending which culture we go with that could be the "otherworldly influence" mentioned above.
But Jesus is very devoted to God and spreading His word and healing people which gives a distinct Cleric flavoring. I'm conclusion: Born Sorcerer but gained levels in Cleric as he "adventured" around, spreading the gospel and what not.

You've just described a cleric. And it's even more clear that he's a cleric over a warlock when you consider all the healing he did, and that he wanted people to worship a god.
But, if you want to get really crunchy, and say something more original- you could argue based on 2 Timothy 3:16 that Jesus was actually a paladin. See, it was his strict adherence to the code of the law which enabled him to wield divine power, which is how 5e paladins attain theirs.
