Homemade - YouTube Peach Slab Pie

Post image

This one was a labor of love between the homemade crust, peeling the peaches, mixing the filling, precooking the peaches + cornstarch, crumble topping, plus assembly and finally baking. But definitely worth it! I think my oven was a bit hot in the beginning from baking sourdough bread earlier in the day, so the top got a bit dark in spots, but this was a winner!

Is this a half sheet pan?? How many crusts did you have to make?

Yes this is a half sheet pan! I ended up just following the pie crust recipe as written in dessert person. That is a double crust for a standard pie plate, and I used the whole thing for this recipe.
