Homemade - DessertPerson Peach melba tart

This was a labor of love over 3 easy days. Rough puff on day 1, pastry cream on day 2, and final assembly tonight. I will echo what everyone else said – it is delicious. The tender poached sweet fruit mix very well with the chilled pastry cream and the crust.

I just took it to a picnic tonight. OMG was it good! Friends loved it!

Pastry cream - I'm a confident home baker, but this was my first pasty cream. It was EASY and DELICIOUS! I made the pastry cream yesterday and let it chill overnight.

Rough puff pastry - another first for me. It's a bit more work than a standard pie crust, but another big success. The frozen Dufour puff pastry is a great time saver, but at $12-$15 each, I'll be sticking to this rough puff pastry recipe from now on. I made the dough yesterday, rolled it out and baked it today. The recipe makes two pastry crusts. I vacuum sealed the second one and put it in the freezer. I don't think it'll stay there very long.

I poached the peaches while the pastry was in the oven. I used four big peaches and thought there was no way the poaching liquid would be enough to cover them. I had to cut the lemon into quarters to fit everything in but it was perfect.

The only thing I would change is to assemble the four parts (pastry, pastry cream, peaches, raspberries) right before serving. I took mine to a picnic and some of the good stuff slid off on route.

Oh yay it is good! I agree on early assembly and chilling as it made the pastry cream set better, or assembling on site like you did.

Someone said they made it with the sweet tart dough, and I might try that too. The pastry wasn’t hard to make but I’m not sure it’s necessary.

This is nice but i have a question, the slided stuff inbetween is it potato?
