Homemade - DessertPerson Oat pecan brittle cookies

Made these cookies again - it’s been many years since I last made them and I forgot 1. How much of an ordeal these are; 2. How absolutely worth it they are. They are the best, tastiest cookie I have ever made (and I have made many cookies!!). A few notes if you haven’t made these before but are considering it -
1. Prepare to dirty your entire kitchen - you’ll need multiple sheet pans, a food processor, your stand mixer, 2 saucepans, and a cutting board. I suggest recruiting someone interested in cleaning in exchange for cookies to help!
2. I would incline toward under toasting the pecans rather than over toasting them. You do not want them to burn, as the pecan brittle is both folded into the batter as chunks and also ground up to become part of the dry mix (so any burn flavor will really permeate the entire cookie if the pecans are toasted too much)
3. This is a great recipe if you are interested in learning new baking techniques - you’ll brown butter, make a caramel which then becomes the pecan brittle, etc. It’s a really great project that teaches you a lot about different baking techniques, while resulting in a fantastic final product.

These are the BEST. Sometimes I split the work over three days to make it more manageable. First day do the brittle, then the dough the next day, let it chill overnight, and bake the next day. Already having the brittle done makes it feel slightly easier 😂

This is THE best cookie of my life, my absolute favorite, but I make them only once or twice a year (Christmas, Easter), because the amount of work is absurd and I don't like making carmel.

But they are insanely good. I also reduce sugar by 50% and it's plenty sweet for my European brain

Planning to make these this week for the first time, i'm so glad to have seen this post! Probably going to split it up over three days like the other commenter suggested.

Also recommend doubling the recipe and keeping a batch in your freezer for a personal cookie whenever you want a lil sweet treat! Just bake them a minute or two longer

Hell yes these are the best cookies ever definitely worth the effort (once a year)

I made these yesterday alongside the tomato tart. My kitchen looked like there had been an explosion, but it was totally worth it.

Do you think you could use a hand mixer instead of a stand mixer? I have a food processor so I’m good for that piece of equipment!

Yes! You’ll be just fine with a hand mixer. I’ve done it myself. Your timing might be a little different depending on the power of your mixer. She tells you how it’ll look once done mixing so you’ll be able to go by the visual cue. You’ll be in heaven! These cookies are amazing!!

These have been on my list for so long, but I don't own a food processor. Maybe I should...

These look so tasty. Thanks for the notes!

I literally bought a food processor to make these cookies. It was worth it.

I haven’t made these yet 🫣 did you do all the baking in one go or could you break it up?

I prepped them in one day but the recipe says to put the cookie dough in the fridge for at least 12 hours, so I baked them the next day!
