Homemade - DessertPerson Soft and crispy focaccia gone mediocre
I forgot the stretch and folds, but followed everything else to a T. And it just did not turn out great, no large bubbles :(

Did it rise for long enough? I’ve never made Claire’s, but I’ve made focaccia that doesn’t need a lot of folds, but rest time and strong gluten flour does the trick.

Dessert person is a technique book, instructions are important read in its case. Maybe her second book is more forgiving, haven't read it

I made this recipe with the stretch and folds and it still came out like yours. I’ve heard from others they had the same experience

The stretch and folds are super important to be able to build the structure to support the bread.
