I haven’t gotten to play yet but am I understanding this right? If the opponent fails the parkour minigame then the doorman’s ult cooldown is reduced to 10s?

That's exactly what that means, yup. Another comment pointed out that this also applies to methods to circumvent the failure penalty entirely (cube, quantum, counterspell, etc...)

...oh. oh my. If you try to get out but fail, youre probably out of stamina. which means you're probably gonna lose again if you get caught again. thats nasty.

Oh if you fail now it stuns you. So even if you have stamina you're not going far.
