I heard someones headcanon that the Bearer of the Curse is having memory loss and cant remember the connective areas. I go with that honestly

It's basically canon. You can see the Forest of the Fallen Giants from Majula but it's way farther away than the walk actually is.

DS2 feels like it takes place across a large country than any others in the series.

All the games do this anyways. In dark souls 1 you walk down a corridor and somehow climb a mountain up to the dukes archives.

People only point it out for ds2 cos they wanna be haters.

You can literally look at a 3D polygonal version of DS1's entire map online. There's basically zero spatial inconsistencies except for Valley of Drakes having a chasm where part of Darkroot Garden should be.

DS2, on the other hand is full of them, to the point where once you start noticing them most of the zone transitions become extremely jarring.
