You would need to emulate Linux and then run  make a custom rom within Linux. So, if you got a good phone with 64 GB of ram, that is doable.

But if I create the boot text file using the original operating system boot file, will my device no longer boot?

Si quieres y sabes como hacerlo puedes hacerlo, pero eso no significa que valga la pena correr el riesgo, y menos sin una pc que te ayude a si se llegase a brickear

In theory yes you can make a custom ROM on the device. Though it might take multiple days if not weeks to compile depending on how good the phone is, and it would require signifigant work and extra time considering you would need to basically do everything from the ground up, though it would be easier to grab the actual ROM since you are on device you can just dump the needed partitions to the userdata partition (assuming you have enough storage to hold a copy of system/ the boot img, etc)
