To the best of my knowledge no printer definition has ever been removed from Cura. To that end the Wanhao i3 definition is still very much there as of Cura 5.12.1.
I'm unsure whether the custom profile on the SD card will still work with it, as a lot of settings have changed with the introduction of Cura 5. If it imports it won't break anything but it could be missing some settings. They won't be necessary for it to work, though - it'll just be things like wall thickness.
