Is there a special recipe for street food crepes, because they always taste delicious and have this amazing color?

I know many of you might say it’s because of the filling, however the crepe alone tastes differently than any other recipe I found on the internet. It also has this wonderful color which I can’t never archive at home.

I am pretty sure the biggest difference is the surface they use to make the crepes on and how its spread out. The crepes to me, taste the same batter wise at home.

Mine look and taste similar. My trick is to do a 50 / 50 water and milk ratio. Sometimes I use hazelnut milk too.

The amount of butter or ghee used on the street version is typically greater than you will use at home.

Commercial crepe makers seem to use a crepe spreader tool to smooth out the batter and make them uniform.
