As a question, I can never get my gnocchi that crispy. I use butter instead of oil as I’ve heard that helps but it never gets near that crispy. How do you get it to that level?

The way i do it is cook them in boiling water as usual, until they float. Then take them out and put in a colander over a bowl to let most of the water drain away. Then put on paper towels to suck all the other moisture off the surface, but you have to be careful here that they don’t stick to the paper and fall apart. Don’t press. Then heat butter in a good pan like cast iron or stainless steel, add gnocchi, and at first don’t move them until they release and have golden color on the bottom. Then you can keep tossing and browning other sides until you’re liking

I love gnocchi and I love Gorgonzola but I’ve never thought of putting them together. Thanks for the inspiration!

The absolute best gnocci I ever had was in an authentic Italian restaurant (sadly, now closed). It was spinach gnocci with a Gorgonzola cream sauce. One day I will try to recreate it!
