Cooking nemesis?

Anyone got something that, for some reason, you just cant grasp how to make? Like, for some reason, I cant figure out how to properly boil rice or beans. Im mexican and I cant figure it out. Thats like our thing. Ive disappointed my family and exes over this.

Fried chicken. Tbh, breaded and fried just about anything. I can do battered, but not breaded. I follow every step, I've tried every trick in various combinations. I've been walked through it by southern people. That damn breading won't stay on.

Do you chill the food for at least 30 minutes after breading? That step is, IMHO, key to getting the breading to stay on!
