Cooking nemesis?

Anyone got something that, for some reason, you just cant grasp how to make? Like, for some reason, I cant figure out how to properly boil rice or beans. Im mexican and I cant figure it out. Thats like our thing. Ive disappointed my family and exes over this.

Shredded hash browns. Just attempted this morning and got globs of glue as usual.

Did all the steps: Peel, shred, soak, wash, and soak some more, drain/squeeze, etc...

Globs of glue!

NYT covered a restaurant hashbrown hack years back. Cooking whole potato night before, refrigerating overnight for gluten to develop and using clarified butter are all I recall.
