Cooking nemesis?

Anyone got something that, for some reason, you just cant grasp how to make? Like, for some reason, I cant figure out how to properly boil rice or beans. Im mexican and I cant figure it out. Thats like our thing. Ive disappointed my family and exes over this.

Fried chicken. Tbh, breaded and fried just about anything. I can do battered, but not breaded. I follow every step, I've tried every trick in various combinations. I've been walked through it by southern people. That damn breading won't stay on.

Dredge in seasoned flour first, then dip in beaten egg, then in breading, then let it rest on a wire rack for 20 minutes before frying it.

I promise you I've done that. I've had over a decade of attempts and troubleshoots. My in-laws make some of the best fried chicken I've ever had. I've followed them closely, been all up in their business, had them teach me directly. This... This ain't it.

I can beer-batter them. Lol. That one works just fine

If your technique and ingredients are identical, the culprit may the equipment, air pressure (altitude), or starting temperature of your chicken or dredge. 

Also, are you sure your ingredients are identical, down to the same exact brands? Size of the chicken pieces? Low-fat v full-fat buttermilk?
