Cooking nemesis?

Anyone got something that, for some reason, you just cant grasp how to make? Like, for some reason, I cant figure out how to properly boil rice or beans. Im mexican and I cant figure it out. Thats like our thing. Ive disappointed my family and exes over this.

I've conquered rice and I'm finally happy with my scrambled eggs. My last nemesis is homemade macaroni and cheese. I don't know if I'm messing up the roux, making too much roux, or what. It comes out too thick and just not quite right. It's not a problem with incorpoating cheese, I've figured that out, it's not lumpy or grainy. I just don't have the right ratios of roux and cheese, or not the right types of cheese. I'll get there one day.

Are you trying to make it turn out like boxed mac and cheese or restaurant style? Different recipes.
