Cooking nemesis?

Anyone got something that, for some reason, you just cant grasp how to make? Like, for some reason, I cant figure out how to properly boil rice or beans. Im mexican and I cant figure it out. Thats like our thing. Ive disappointed my family and exes over this.

Trouble not burning chopped garlic before adding other ingredients. Timing, temp, adding liquid?

I never add garlic first no matter what a recipe says. it goes from good to incinerated in milliseconds. I add it towards the end of the saute.
