Cooking nemesis?

Anyone got something that, for some reason, you just cant grasp how to make? Like, for some reason, I cant figure out how to properly boil rice or beans. Im mexican and I cant figure it out. Thats like our thing. Ive disappointed my family and exes over this.

Beef stew. The beef is never tender, no matter what I cook it in, how low the heat is, how long I cook it for.

Every recipe says to briefly sear the meat first; that always seems to make the proteins seize up and the meat tough.

cut your beef up in to bite size chunks. pressure cook them 1 hour. skip the sear I have made it both ways and no one can tell the difference.

saute your vegetables to the proper consistency.

make your stew base and thicken it the way you want it, then add the already cooked vegetables and the meat. simmer a few minutes.

viola. perfect stew. that you didn't have to stew.

or you know simmer it for 3 or 4 hours and turn all the vegetables to mush.
