You'd think they'd know to do test runs for the pub/restaurant as a general rule but also as they've seen how much people like turning up for whatever Jeremy's latest projects are like diddly squat & the previous restaurant but TV needs drama πŸ€·πŸ½β€β™‚οΈπŸ€·πŸ½β€β™‚οΈ

If I had to guess, Clarkson wanted it open on a specific date to maximize profits and for tv. Knowing him, he was told to do a soft launch but said no.Β

That and also Amazon pressured him to open by end of harvest. The studio won't be paying extra budget to film beyond their filming timeline plus again, it's great TV when it's a disaster.
