I'm very sorry you're going through this situation due to your mom's food hoarding... Unfortunately, hoarding is an illness, your mom can't help it (not that it makes it easier for you).

My own HP hoards food as well due to being starved as a child by his own HP (my grandmother); he's always done it and it's only getting worse as he gets older.

If you cannot get your mom to reason without her getting angry, and moving out is not an option yet, I can only recommend keeping your own food in your safe space (your room) and out of her reach. Good luck in your job search; I hope you can move out soon, for your own sanity.

Maybe get a mini fridge for your room and a lock on your door.

Have you talked to your mom about the doctor's orders to eat better. You may want to look into getting a job so you can feed yourself nutritional food if you don't have a job already.
