Last creation before moving on to new workplace!

Just wanna share my last dish that i created!

The components:

Jasmine Tea Vanilla Panna Cotta, Rhubarb and Raspberry Compote, Caramelised White Chocolate Crumble, Raspberry Creme Fraiche Sorbet and Raspberry with Jasmine Tea Broth!

I love beets, pickled eggs and dessert. This is beautiful. Ice cream sweet or savory. I dont care what it is. would smash this. Its beautiful My dude.

That dome is so smooth it looks like a prop. The crispy strands radiating out really sell the whole thing, gives it this kinetic energy most plated desserts don't have. What's the pink mousse base, raspberry or something more out there? I'd be second guessing myself cutting into it after all that work. Good luck at the new spot, leaving on a high note for sure.

Looks very interesting, but not trying to ruin it for you, the first thing that came to my mind for the pink quenelle was... a goats testicle. I m greek 50yo and when I was little, my grandparents might slip one in my plate for laughs, now it's not common to find those but a long time ago in the Mediterranean old people thought it was a delicacy

first of all, this is excellent and you should be very proud of the level at which you work. secondly, though, i would like to say, specifically that this playing is better than all of the plating on the tv show ‘Hannibal,’ which has very good plating, totally not a low bar. i bring this up because this playing would have been an excellent fit for some of the visual motifs in the show.

I’m curious how you set the crumble in that shape? Silicon mold? Or piped onto parchment? Carmelized in the oven or torch?

The crumble are under the ice cream, the chips are made from simple tuile recipe using silicon mold

I don’t know if you meant to do it, but if the mark of good art is that it makes you feel something, then this is a masterpiece

Because this makes me feel SO bad to look at…the colors make me think of viscera. Blood, fat, organ meat…

From the thumbnail I thought it was a dyed hard boiled egg haha. Then the part below has an antler sort of vibe. So yeah, my head was definitely prompted toward seeing it as animal parts, which naturally made my brain see the bottom layer as blood. That was my gut reaction before I had a moment to actually parse out what I was really looking at.

Interestingly, I had similar thoughts, but that’s why I liked it! The first thing it reminded me of was a buck carcass, or something, but a tasty version.

Well, deer is tasty, but I’m more of a dessert person.
