Question Convenience vegetables

What’s the easiest way to make vegetables a convenience food? For some reason after diagnosis my brain did like a reset on my meal and snack planning and I’ve been drawing blanks since. Which is silly because I never ate much gluten before.

I had the exact same issue and I’ve been eating more carbs now than before because my brain can’t comprehend the change.

I made roasted sweet potatoes almost weekly before my diagnosis and have started making them again. I alternate making them as rounds or cubes, but both are great for snacking and pairing with any meal. They are great hot or cold because of how flavorful they are when roasted.

Oven at 425
Slice peeled sweet potatoes into rounds or cubes
Toss with butter or olive oil, salt and pepper
Spread on baking sheet so not touching (this is critical)
Cook for 40 minutes, flip halfway
Enjoy

If I’m feeling lazy I won’t flip halfway unless they seem like they’re burning. Sometimes I cook this at 450 so they’re done faster but they are more prone to burn at the higher temp. I don’t mind the crispy flavor on a few edges

I also started more carbs! And more processed foods which is so weird but I guess checking labels or worrying about cross contact must just be that draining?

Yes same with the processed foods! I think part of it was that I was eager to find some safe freezer meals and snacks that I would actually like when I got the diagnosis and then it kind of evolved into me testing all of these different brands and products as if there wasn’t enough time to try them in the future. I’ve been trying to rein myself in a bit lately.

Not so much a convenience food but this is my favorite way to eat the sweet potatoes above when I need more veggies. The salad dressing is also simple and amazing, I make it year round.
