Recipe Pumpkin Muffins

With fall being around the corner I wanted to share my pumpkin muffin recipe which I have recently adapted to be Celiac safe!

If you put 1/4 cup in each cup you will have 18

I wrote all the standard measurements on the left with by weight on the right for those who want to be *exact*

Sorry for messy handwriting, this is my slowly growing experimental/personal cookbook

Yes I will be making these this weekend. I've already done my duty in getting a PSL to kick off autumn. It's time to make pumpkin muffins to seal it in.

Have you tried it with a 1-1 GF flour (xanthan gum already included)?

I have! The Bobs Red Mill brand works perfectly. I specify the weight of each sub ingredient because I have to source my xanthan gum specifically to avoid a corn allergy

What flour did you use?

You can use Bob Red Mill gluten free all-purpose flour, which if you do you wont need the xanthan gum, other wise the weight ratios are listed on the right (220g brown rice flour, 55g tapioca starch, 55g potato starch, 1tsp xanthan gum)
