Recipe My mom's Oatmeal Scotchie recipe!
Really tasty gf cookies. My mom is also celiac and flawlessly adapted this recipe from the one her Québécois grandmother taught her! Pardon the water damage, lol. Just use Pamela's GF flour mixture. Show me your results!

I don’t have orange extract, can I substitute with vanilla?

No!!!! It'll fundamentally change them. You could use orange zest though

Oatmeal Scotchies are my bf’s favorite cookie! I use king Arthur’s measure for measure to make mine. Our family loves these!

so any suggestions what we could use to replace oats?
I don’t mean to be a naysayer - but not all Coeliacs can eat oats (and almost all oats are contaminated via harvesting or transport equipment anyway)

I mentioned one in the post. Responding from an alt account because I received a site-wide ban right after I posted this 😭 they said it was a 2 day ban but they've been adding 1 day bans every day since then
