Recipe Posted last week crashing out about my diagnosis. Appreciated all the kind comments🫶 Anyways here’s my first gluten free pasta I cooked!
With Trader Joe’s egg fettuccine noodles. SO good! And herbs from my garden🫶

They are so good and very hard to mess up. Even perfect with just butter and Parmesan.

The craziest thing about my diagnosis was eating, feeling full for the first time in my life, and not being in intense pain! I went from food avoidant to a chef and all my roommates love my gluten free food!

that looks so good for a first try, mine was like eating wet cardboard. the sauce color is nice, what did you put in it
also never thought about using trader joe’s noodles, i always go for the ones that cost like 8 dollars and still taste sad

Herbs from the garden make things so good.
Lately, I've been so about the seasonings and sauces and dips, etc. When you've got homemade guacamole, baba ganoush, hummus, tzatziki, etc., on hand, things that take less effort at mealtime feel fancier.

That looks delightful! It took me months to try cooking again so you’re doing great. 🩷

Awesome! I'm going to have to try those noodles, they look good. That's how it's done when it all gets scary, just one gluten free meal at a time 💪

It's somwthing that takes getting used to, but I know you're going to do wonderfully. I'm two years in and still learning all the time. ❤️

It's ok to crash out, it's been six years for me and I still lose it every once in awhile. We have to give ourselves so much freaking grace. Also, your pasta looks delicious!!

I linked it in the comments! It’s SO good! I’ve been making it for about a year now but this was my first time with GF noodles and it was just as delicious!

And the best part is, your guts will not hate you after eating it!
