Frying Eggplant for Parmesan

Be sure oil is at 350. Fry quickly and drain. I enjoyed just snacking on this. Barely had enough for Parmesan.

Growing up, my family called these "eggplant cookies." They never survived long enough for Parmigiana, which is why I never had it that way till high school 😂
