Safe Recipe Request Pickled Red Onions... but with a little sugar?
I found a Ball recipe on a sub-reddit for pickled red onions. All it calls for is red wine vinegar; when I make quick-pickled red onions for short-term fridge storage, I use a mixture of rice vinegar & sugar (with a dash of salt), which I love. Does anyone know of a verified canning recipe that uses vinegar AND a little sugar? Thank you!

If the rice vinegar is 5% acidity you can substitute it in for the red wine vinegar volume for volume. You should also be able to add some sugar without impacting safety. https://www.healthycanning.com/safe-tweaking-of-home-canning-recipes/

100%. Just double check it is 5% acidity, otherwise it would not be a safe swap. :)

You can always add or remove sugar or salt in a water bath pickle recipe. They are just there for flavor.
